I’m in England just now and enjoying the four day weekend we have for Easter. Very civilized having Friday and Monday public holidays either side of the weekend as it allows so many of us to travel back to our families. I always feel that it is like Christmas without the hassle of gifts and the big run up to the day.
In our house Easter is all about roast lamb served with all that is seasonal and plentiful at this time of year. A real celebration of spring. We’ll be gorging on Jersey Royal new potatoes and local asparagus simply served with butter and Maldon.
I got my hands on some rhubarb at the market yesterday so I’m going to roast that (cut it into 3 inch lengths, sprinkle with a little sugar and place in a lasagna dish, covered tightly with foil and roast at 400F/200c for around 20 minutes until the rhubarb is soft) to serve with shortbread and ice cream.
Oh, and of course there will be chocolate eggs and chocolate bunnies and we’ll be making and eating these hot cross buns
And over the weekend we’ll be following what we do in California and having long lazy brunches with friends, so I thought it would be useful to dig out some of my favorite brunch recipes that I’ve posted on here in the last couple of years.
I love this healthy Mexican egg dish and it is a great one to do for a crowd.
This baked oatmeal is delicious and an easy one to make ahead
And this orange and rosemary cake is always good to have around for a long weekend.
As a Brit, baked beans run through my veins and this homemade version is yummy.
